Crunchy Cashew Chicken

      I’ve made a few different Asian dishes at home, but I must say this cashew chicken takes the cake….and the whipped cream….AND the cherry on top. The sauce is quick and easy to whip up. Caution: you may end up drooling, your eyes may glaze over, and you might even cry happy tears from how delicious this is. Don’t say I didn’t warn ya.

Crunchy Cashew Chicken

• 1 lb chicken, cut into chunks
• 1 head of broccoli, cut into florets
• 1 red bell pepper, cut into chunks or strips
• 2 tablespoons of oil
• 5 cloves of garlic
• 1 teaspoon ginger ( I use this: it's very cheap & lasts a long time! There's also ginger paste in the produce section of most grocery stores.)
• 2 tablespoons rice vinegar
• 4 tablespoons hoisin sauce
• 1 tablespoon soy sauce
• 1 tablespoon cornstarch, if needed
• 1 cup of unsalted cashews, or salted if you're into that #saltlife

Toast your nuts (optional): 
1. Preheat your oven to 375 degrees.
2. Place cashews in a baking dish or on a baking sheet.
3. Roast for 5-ish minutes. 
4. Set aside. 

Cashew chicken:
1. Cut your broccoli, pepper, and then the chicken into small pieces.
2. In a medium-ish bowl, combine the ginger, rice vinegar, hoisin sauce, and soy sauce. 
3. In a large non-stick skillet, heat up 1-2 tablespoons of your oil of choice.
4. Add chicken and sprinkle with salt and pepper. Cook for about 7 minutes, moving them around every 30 seconds. 
5. Stir in the garlic, broccoli, and bell pepper.
6. Add your sauce and let it cook with the mixture a little bit. If you'd like your veggies to be a little bit softer, put a lid on your skillet to let them steam! 
7. Add the cashews.
7. If you need to thicken your sauce, just add a little cornstarch slurry! 
    - In a small prep bowl, add a tablespoon of cornstarch + water. 
    - Mix together with a spoon and add to your pan. 
    - Turn the heat up for just a minute or so to let the sauce boil with the newly added slurry & it should thicken up in about a minute or so. 
8. Serve with Easy Brown Rice!
